January 24, 2004: In a 13 cook chili cook-off in Sugarland Run, VA*, Motor Squad HEAT takes 1st Place "Best Chili" and a separate award for "Hottest" chili. The small community of Sugarland Run was voted "Best Place to Live" in the East for communities under 100K in population by Money Magazine, Jan. 2004 issue. January 29, 2005: Motor Squad HEAT takes 3rd place "Best Chili" and a separate award for "Hottest" chili at Sugarland Run cook-off.

| OK, this is my personal interaction to the world-wide Internet; that
is, my very own recipe for chili. I have named it "Motor
Squad HEAT."
I used the basic recipe during a major competition and
made it to the semi-finals. I have improved it since. I do not have time to compete so I
see nothing wrong with letting anyone try it for themselves. I have experimented with this recipe for many years because I am a chili "nut," due largely to growing up with it as my favorite meal that my mother would make. Suffice to say, a lot of effort has been put into this, the final recipe version. Also, I've added a super recipe for beer bread that is great for "dunking" into this chili. This bread is so easy to make that even non-cooking cops can succeed at it! It was sent to me by another retired Fairfax County (VA) officer, Sammy Walker, who is enjoying his retirement on the shore in the Carolinas. This recipe follows the chili one. | Brown the ground beef and break up to fine pieces while browning. DRAIN ALL GREASE. Mince up (easy with a food processor) the onions, green peppers, and jalepenos. Add the minced stuff to the hamburger. Drain the juices to the cans of kidney and pinto beans and "cooking tomatoes". Also, while the whole tomatoes are in the can, take a knife and mince them up also. Add all of these and remaining ingredients, stir well, and bring chili to a boil. Simmer at lowest heat while covered for two hours. Serve up with tortilla chips and shredded cheddar cheese for topping if desired. |
| Helpful hints: The spices are the key to the taste. To control the "heat" you may add or subtract the number of jalepeno peppers. Using only SEASONED SALT and the Sweet n Low (or other diet sugar substitute) is a must. It mixes better with the chili. Be careful with the garlic. Add to taste as some people's digestions are sensitive to it. I've had some great success cooking the chili in a crock pot instead of a stove top pot. In a crockpot the flavors tend to "wed" better. To do so, first brown your ground beef on the stove then add all the ingredients to your crock pot. Miscellaneous: This recipe was created by Don Ingerski . Serving Suggestions: Have separate bowls of chopped onions and grated cheddar cheese to use as toppings. The chili's "heat" sneaks up on you so make the cold beer or non-alcoholic beverage readily available. Also, leftovers (if there are any) can be happily frozen. |

| Pre-heat oven to 350 degrees. Pam-spray a loaf bread pan. Stir all ingredients together and pour in the pan. Bake for 45 minutes or until a toothpick inserted in the center comes out clean! |
| My Personal Experience: When I first made Sammy's bread I used two packets of "Sweet 'n Low" instead of the honey. Why? Well, to be honest, I didn't have any damn honey in the house at the time!!! Besides, "Sweet 'n Low" or its equivalent mixes so much better than sugar. Now when I added the warm can of beer it was obvious to me that nothing was going to "pour" anywhere. It was more of a bread dough than something one could pour. I even added some more beer. What you will have in your bowl is something more akin to what your dog has thrown up on the floor in the past. Lumpy, gooey, and off-white. I didn't have a bread loaf pan so I put this glob of stuff into a 2 inch cake pan. It came out looking like I baked something that your dog has thrown up on the floor! But taste? Hmmmmm....GOOD! Just break it off in hunks and, as Sammy says, dunk away!!! |
